Courgette ‘pasta’ (or ‘noodles’)

 

 

This is a fantastic alternative to pasta or noodles. Serve it with a bolognese sauce or a stir-fry.

Peel the courgettes with a julienne peeler up to the core (including the skin).

Heat some butter or coconut oil over a medium heat in a frying pan, preferably with a lid. Fry a chopped garlic clove until aromatic. You could use garlic powder instead, in which case add it after the courgettes.

 

 

 

Add the courgette and stir through. Add salt and black pepper. Cook over a medium heat, stirring frequently. Partly covering with a lid will help them to cook quicker.

When soft enough to your taste, drain any excess water and serve.

 

 

 

 

 

Alternatively, fry up some peppers and red onions first and add the courgettes for a quick and easy accompaniment to meat.
